Panner Tikka

Ah, Paneer Tikka! It's one of my favorite Indian appetizers. The process to make Paneer Tikka is fairly simple but requires a bit of preparation. Here's a recipe to help get you started: Ingredients: - 250 grams paneer (Indian cottage cheese), cut into cubes - 1 cup yogurt - 2 tablespoons besan (gram flour) - 1 tablespoon ginger-garlic paste - 1 tablespoon lemon juice - 1 teaspoon garam masala - 1 teaspoon cumin powder - 1 teaspoon coriander powder - 1/2 teaspoon turmeric powder - 1/2 teaspoon red chili powder (adjust to taste) - Salt to taste - 1 tablespoon oil - Onion and bell pepper (capsicum), cut into cubes for skewering - Mint-coriander chutney, for serving - Lemon wedges, for serving Instructions: 1. In a bowl, mix together the yogurt, besan, ginger-garlic paste, lemon juice, garam masala, cumin powder, coriander powder, turmeric powder, red chili powder, and salt to form the marinade. 2. Add the paneer cubes to the marinade and gently toss until the paneer is well coated. Allow it to marinate for at least 30 minutes, or longer for more flavor. 3. Preheat your grill or preheat your oven to 200°C (400°F), and line a baking tray with aluminum foil. 4. Thread the marinated paneer cubes, along with onion and bell pepper, onto skewers. Alternate the paneer, onion, and bell pepper for a vibrant presentation. 5. Brush the skewers with a little oil to prevent sticking and place them on the prepared baking tray. 6. Grill the skewers for about 8-10 minutes or until the paneer is lightly charred and the vegetables have softened, turning them occasionally for even cooking. If using an oven, bake for about 15-20 minutes, flipping halfway through. 7. Once cooked, remove the skewers from the grill or oven and allow them to cool slightly. 8. Serve the Paneer Tikka skewers hot, garnished with fresh coriander leaves and accompanied by mint-coriander chutney and lemon wedges on the side.
